Rubrics in the Culinary Classroom

Ron Wolf, CCE, CCC, is a writer and hospitality educator at Florida Community College at Jacksonville's Institute of the South for Hospitality and Culinary Arts.  In addition to his teaching duties, Wolf develops and expands curriculum in the food service arena and serves as a Commissioner with CAHM, the Commission on Accreditation for Hospitality Management.  Wolf is certified with the American Culinary Federation as a chef de cuisine and culinary educator.

Ron Wolf's article related to assessment in a culinary setting was recently published in the Gold Medal Classroom.
